Gift for Mum which isn't an experience

A gift for my 62yo mum. Bought them hotel vouchers last year and they've still not used them!! She's buying me a spa day (with her).

She isn't really into gardening, fashion nor a massive foodie.

Please help! £300-500 budget, the lower end it just mum. The higher end if combined with dad...

2 nights in Brugge. I'm 62 and that's what my son bought me for my birthday. I went over in a ferry with the car and stayed in a hotel close to the center.
