St Nicholas feast - what to serve?

I'm not sure if anyone here celebrates St. Nicks feast on December 6th but it a tradition we do and every year I struggle to find stuff.

I'm a useless cook so pre-made is a must and we don't eat meat and I really wanted to serve this:

However I can never find it in stock anywhere in early December, just sporadically around xmas day. I looked online for other similar 'wreaths' in other stores and everywhere that has them seems to be only to book and collect on 22nd, 23rd, 24th.

Has anyone discovered anything like this that will be available for St. Nicholas day?

I know you said you don't Cook but tbh it's really an assembly job if you can get ready made pastry .

Looks like vegetable soup which would be ideal for vegetarian/vegan (I have a soup maker and it's really quick especially if I use leftover roasted vegetables that I freeze . Roast potatoes, carrots , I always roast at least 6 onions and freeze on small pots , a fresh chilli and some tomatoes that have gone soft . Marigold Buillion ( the Low Salt one ) for stock .

For the Wreath , yes it would be easy enough . I looked at the ingredients , that's too much of a mis-match for me especially if the soup had root veg
Roadted peppers ,peppers and mushrooms (do in advance ) some harrisa paste on the flakey pastry . Roll like a sausage roll, slash the top and form into a circle . I'd add Halloumi but I don't know if you're vegan?

Wha's for dessert ?
