Can I take out cheese now?!

I should know the answer to this really!

I have some big slabs of cheddar and obvs they're not great straight from the fridge. Can I take them out now and just have them kept ambient in the kitchen for the next 48 hours or so? Covered of course

We’ve started eating it already

Yes
cheese can be stored out of the fridge

Ooh can it really @rubyslippers ?

I think I'll keep it covered and just have it on the side now for the next few days. I just don't like it cold

Depends how warm your house is, but I'd say it would be fine in a cool part of the house.
