Braised red cabbage recipe please?

I am looking for an easy red cabbage recipe to cook in advance for Xmas dinner. I usually buy readymade but realise how cheap a red cabbage is I should make my own.

Delia’s is great. I’m actually making it now! I make a massive batch (using three cabbages) and freeze it in portions.

I like a bit of spice in mine so use a bbc good food recipe. I think it’s sticky spiced red cabbage by Barney D. I always add a fresh red chilli too.

Red cabbage is cheap and I always have one in my fridge to grate over salads. They’ve been 40p for years but now 70p ish. A sign of the time I guess.

I've tried all of Delia's red cabbage recipes and honestly I don't like them.

Ideal for me is trad Danish which can be done in advance, keeps for ages and doesn't mind being reheated forever. Yes, the secret ingredient is Ribena.

I make it up as I go along:

  • Chopped red cabbage
  • Splash of red wine
  • Splash of vinegar
  • Chopped onion
  • Chopped apple (peeled and cored)
  • Bay leaves
  • Juniper berries
  • Cloves
  • Pinch of all spice
  • Sugar
  • Salt and pepper

All into the slowcooker for 4-6 hours. Frozen into portions to reheat for for xmas day, boxing day, and NY day. It's one I like to do in advance so the slowcooker is freed up for other things (e.g. mulled wine!).

There's a bbc good food recipe called Develish red cabbage. Superior to delia IMO.

I use a Jamie Oliver recipe. It's bacon, red onion and fennel seeds fried with a good glug of olive oil until golden. 2 big cooking apples peeled and chopped, then add your chopped red cabbage (I use a whole one). Add balsamic vinegar to about halfway up the pan (generally about half a bottle) and salt and pepper to taste, leave to simmer for about an hour or until sweet and sticky. Depending on how big your cabbage is add more or less vinegar.

Serve topped with knobs of butter so it goes all glossy and a sprinkle of fresh parsley.

My recipe is a rasher of bacon per person sliced into strips. Fry bacon then when cooked add 6 crushed juniper berries, stir around for a few seconds the add the cabbage and mix in with the bacon and juniper. Pour in a couple of tablespoons of red wine vinegar and the same of water, cover tightly and cook on a slow heat for about 40 minutes.

If you don't want it sharp you can add a teaspoon of light brown sugar with the vinegar

The Jamie Oliver one is the one I use. It's delicious and the smell of fennel and bacon frying is just immense

Can I use red onions instead of brown onions in red cabbage?
Most of the recipes state brown onions and I don't want to ruin it!
I also have no cooking apples, so going to use Granny Smiths.

It's not a precise recipe, you're not going to ruin it playing around with onions and apples. The key bit is the balance between sour and sweet, and that's personal choice - adjust as you go.

Ah being half Danish (but living in England) I really need to draw your attention to the amount of sweeteners in Ribena now and that totally affects the taste of Danish Christmas red cabbage. You have to search out a blackcurrant cordial with no sweeteners in. I currently use a belvoir natural blackcurrant cordial. 🎄
