Your best vegetarian twixtmas buffet items please?

DPs will be hosting extended family for a buffet style meal sometime after the big day & 4 of the 12 are veggie. Even tho I know that they will all be happy to eat the non meaty bits of our usual buffet (cheeses, salad, wedges, crisps, quiche, pickles etc - just not the leftover ham&turkey), DP will only feel they've hosted properly if they provide something 'special' for the veggies. Can anyone recommend me some nice and overtly vegetarian party food type items? Thanks!

Mini tarts.if you start with the same base.red onion.garlic,peppers,tomato softened in a pan.splut in half add chorizo to one.put into pastry bottoms(in muffin tins) add a few find of feta or mozzarella and pine nuts.really tasty little morsels.
You could also do some pastry pinwheels.again one could be cheese and pesto.or switch it up with salami in for meat eaters.

What about something like this veg tart?
I've found that vegetarian options can be popular with meat eaters too, so make plenty!

I also make some more substantial salads so that they are more like part of the main than a side.

Eg chickpea and squash salad I've sprinkled this with crumbled feta sometimes but wouldn't if cheese already forms a substantial part of your buffet.

You mentioned quiche but almost dismissed it - I think you can make / buy some lovely quiches which would suit everyone. Or Frittata or tortilla?

I'm not a big fan of masses of 'beige' party food but they can help in situations like this eg bhajis and vegetable samosas. Or vegetable spring rolls.

Call me old fashioned but I love a vol-au-vent - always considered 'posh' where I grew up in the 60s/70s. I fry up chopped mushrooms and finely chopped spring onions, add a pinch of dried herbs, a couple of table spoons of cream cheese, stir till the cheese goes more sauce like. Season to taste.

Something even my resolutely stuck in his ways Dad didn't notice wasn't meat, was using the vegetarian Richmond sausages in puff pastry, with some mustard or cranberry sauce to make sausage rolls.
