I guess it would depend on how many players you want the game to accommodate and what style type (strategy, light, two player, party game - just to play with folks at Christmas or ongoing...?)

Here are just some of my personal favourites - these scale from 2-4 players. They are all kind of mid-weight games that aren't too hard to learn but have good juicy choices to keep adults thinking:

Lighter-easy to teach

-Cascadia
-Azul (Stain Glass)
-Splendor
-Colt Express - silly and fun
-Carcassonne
-Isle of Cats

Mid-weight bit harder but great interesting games:

-Meadow (love it!)
-Everdell
-Wingspan
-2 player - 7 Wonders Duel

A really easy fun little game I played with a larger group and wide age range at Christmas last year was "Stolen Paintings" - not expensive either

Like @FixItUpChappie I have loads of suggestions but it depends on how complex and how long you want the game to last!

Would second "Wingspan" and Everdell, and would add "Pandemic" and "Port Royal" (cheap and fun). Also "Quacks of Quedlinburg." All of those take roughly an hour.

For more than 4 players, how about "Citadels"?

Oh nooo, why has no one suggested 'Exploding Kittens' ? I bought it for DS, 16, on the strength of recommendations here. Now I'm worried it was a bad choice 😩

Just one or herd mentality are both fun silly ones that work really well in bigger groups.
We’ve also enjoyed river dragons, takenoko, linkee, rhino hero and ticket to ride (any of them except rails and sails - too much concentration needed for Christmas in my opinion).

Don't overlook very simple games like Uno. They don't require a lot of thought and allow conversation around the table. It also fits in a pocket to take to the pub.

Scrawl - a drawing/word game with some very silly (sometimes rude) things that you have to draw. Each person starts with their own card and draws what's on that card. Then you pass your drawing to the person to your left, and they have to write down (on a separate card) what they think the drawing is, and they pass their written card on to the left, and that person then has to draw what you've written. Keep going until you get your original back and then reveal to see how close people were to the start point. A drawing/writing version of Chinese Whispers

With a big group I don't think you can beat a game of Spoons - and all you need is a normal playing deck plus cutlery (I've also played it with corks which was good).

And everyone always ends up getting super competitive 😆
