Whatever MIL makes. She has a dedicated freezer shelf and cupboard space for veggie options for me. I think she likes to try different bits and has me as an excuse.

We invited her for Christmas dinner but she declined and wants to do boxing day instead. She's had a tough year and wants to have the day just her and her husband.

Our contribution will be leftovers I presume!

This year it will be leftovers.

In other years we did steaks, chicken traybake, lasagne or other pasta dishes.

Something nice but normal.

We will be doing lamb raan from the dishoom cook book, with gunpowder potatoes, easy as can just put the meat in the slow cooker or low and slow in main oven.

Had a in laws xmas at weekend and did kleftiko - nice and easy to prep - lamb, lemons, Maria piper potatoes, olive oil, dried oregano, bay leaves and a little water, and cook for about 3 hours. Just check to move bits about and that doesn't go completely dry. Served with tabbouleh that did day before, but also good with prepped salad. Meant we weren't in kitchen all day Smile

My adult sons always go to their Dads on Boxing Day for lunch so I have a turkey sandwiches for lunch then I do a Boxing day buffet for evening with warm mini sausage rolls, chicken dippers, motzarella sticks, pigs in blankets, chocolate fingers, pringles, fresh fruit salad, which we often finish up for breakfast the following day, and cream, crisps and a large helping of chocolates all swooshed down with copious amounts of wine.

I usually do gammon, cauliflower cheese, cranberry sauce and peas.

This year thought the DCs have requested gammon for Christmas day so we will have ham and pickle rolls and soup.

Usually do a second Christmas dinner as we have one set of parents alternating Christmas Day and Boxing Day but we are alone this year! DH has to work Boxing Day so I'm going to make a lovely Turkey curry for when he gets home. Cannot wait!

Turkey curry. It's sort of a family tradition Ever since I can remember, and I'm mid 50s now, my Dad bought the biggest turkey he could fit in the oven so Boxing day was always curry made with leftovers. There would be turkey sandwiches for days too. One year the turkey was so big Dad had to cut the legs off and play oven Tetris with everything to cook dinner. There was loads of Turkey curry that year!

Haha my DH does this when buying a Turkey. Honestly this years is ginormous! Once we have eaten he will take all the meat off and fridge a few portions and then freeze a few too. Done my meal plan for Christmas to new year and everything is bloody Turkey based 😂 Turkey, leek and bacon risotto, Turkey curry, Turkey stir fry, Turkey leek and gammon pie.....

We have a buffet at PIL - made up of leftovers from Christmas Day plus a Ham, potato salads, coleslaw, Mexican slaw, sausage rolls, guacamole, salsa, tortilla chips, crudités, salad, cheese, crackers, etc.

I’m doing a gammon roast. One year when we had guests I did gammon egg and chunky chips, that was a big success.
