I made Mary Berry's last week but it wasn't as light as I'd hoped, I follow the instructions to the letter but it was just a bit too dense.

What are your favourite Yule log recipes please?

Also I bought plain flour like an idiot so I am guessing I'll need to add baking powder once I discover the ratio.

I do the Delia one. It doesn't use any flour which is good because one of my family is gluten intolerant.

I've made the Nigella Lawson one but it is in the freezer so not sure what is like yet. That ones GF as well, which is as I need it to be

Nigella’s s recipe is fabulous but I roll some whipped cream in with the ganache to lighten it a bit as it is very very chocolatey! Yum!

I use this cake recipe + ganache instead of their buttercream recipe. It's the easiest recipe I've ever found (no separating eggs etc) and made with gf flour it's imposible to overmix so possibly even better than with wheat flour. www.thespruceeats.com/traditional-french-buche-de-noel-recipe-1375219

One of my favourite Christmas things is making and decorating The Bûche (as it's known in my house) late on Christmas Eve. I make meringue mushrooms in the microwave (one egg white + enough icing sugar to make a thick paste, roll into shapes and microwave) and crumble any imperfect ones to make snow.
