Hosting Boxing day - relaxed hopefully

Boxing day, we are hosting 6 adults (plus ourselves - 2). These are DP close friends & their DPs. I've met them all a few times, but not lots due to there meet up being around there sport, me working shifts & covid.
We'll both cook and prep - DP suggested pulled pork as he really enjoys it when I make that plus it's super easy.
Can you throw some ideas for sides, nibbles etc to balance out the meat please ?
I was wondering if doing it along side tacos, fajita stir fry veg, jalapeno, Mexican style rice with sour cream & a hot salsa would work ?
Any ideas welcome please - preferably prep in advance do we can relax on the day

A tin of 4 bean mix, a tin of corn, some onion diced and softened or sliced spring onions all mixed together is a nice Mexican-ish salad - you could heat it if you wanted, but just as good cold so can be done in advance.

Either sliced avocados or guacamole (mush avocados, add 1 SMALL clove garlic crushed, lime juice, chilli pepper or paprika, salt, drop olive oil if needed - add small amounts of everything and taste as you go, as you can always add more of individual things). Guac can be done in advance if stored in a bowl with the avocado stone sitting in it (remove before serving) and with cling film over the bowl to help prevent going brown.

Fajita veg you can have sliced up (and seasoned) in advance (store in an airtight tub in the fridge), and if you will have the oven on anyway for the pulled pork, you could just do them by tossing on a roasting tin instead of in a pan.

I’ve done fajitas on Boxing Day before and it was a big success. I also added potato wedges as the men in my family enjoy those.
