How many and what veg do you have on your dinner?

I have two oven shelves which will be cooking chicken (not doing Turkey) on one and roast potato / stuffing on the other.

Four hobs, one of which used for mash potatoes so that leaves 3 x hobs for vegetables.

What veg and how many types do you do for Christmas dinner?

I feel like I need to be selective due to the above so thinking:

Peas and carrots in one
Broccoli and cauli in the other - possibly with a cheese sauce
Then I have one job free - is that enough veg or should I do another?

I ussuallly do braised red cabbage (cooked the day before), cauliflower cheese, sprouts, carrots and peas, sometimes green beans. I just use one pan for carrots and green beans though, I just start cooking the carrots first as they need longer.

Braised red cabbage - already made and in freezer so just needs heating.
Roast parsnips and carrots will be done while turkey is resting

I do stir fried Brussels sprouts on the hob and carrots and parsnips in the oven. I buy a jar of red cabbage and heat it on hob or microwave it. I presume it's a sausage meat stuffing so needs to go in the oven?
Otherwise I make stuffing by microwaving a chopped onion in a bowl and then just add breadcrumbs, dried sage, salt and pepper.

Roast potatoes
Sprouts (either fried or maybe in a gratin. never boiled)
Carrot and parsnip mash

And that's enough veg sides for me to go with the two meats and two stuffings. Not a fan of braised cabbaged and really hate cauliflower cheese.

Oven: bird, with stuffing inside it; later on Chantenay carrots in a foil parcel at the bottom of the oven; when bird comes out to rest, roast potatoes and roast parsnips go in, and a bit later so do the cocktail sausages

Hob, not long before we eat: peas, Brussels sprouts, bread sauce, gravy. Peas can be done in steamer over sprouts.

Don't usually bother with any other vegetables, but there are only four of us.

I do roast parsnips, sprouts, roast carrots and shallots, broccoli.
Once the turkey is out and resting this will free up space in your oven for roasting veg. I don't do mashed potato.

We are having carrots, parsnips, sprouts & red cabbage, the carrots & sprouts will roast in the oven, sprouts on the hob & the red cabbage will go in the microwave as it is pre prepared.

I roast carrots, parsnips, sweet potatoes and beetroot in with the roast potatoes, steam Brussels (microwave) and cook swede and peas on the hob, I have cooked red cabbage too if I have a lot of mouths

My preferred choice would be roast parsnip, sprouts, carrots and red cabbage. I would rather have a few veg which are cooked well that loads of soggy or cold veg.

Peas are for when you are in a rush or CBA.

Yeah, it wouldn't occur to me to cook peas on Christmas Day.

Not enough veg for me for Christmas day.

I boil and mash swede in advance, then reheat in the microwave.
Then I use only 1 hob with a steamer containing cauli and carrots (yes, in same water!) then leeks and sprouts on top.

Sometimes we also have red cabbage and sometimes the cauliflower is cheesed, if so, they're oven baked with the roast spuds, parsnips and pigs in blankets.

I use the other jobs for gravy and for steaming the pud. The smallest hob isn't any use for big pots.

Roast potatoes, parsnips, carrots and onions.
Boiled leeks, cabbage and peas.

Peas Izard in the microwave as I don’t like when they turn mushy when boiled.
Cabbage I cut into ribbons and lightly boil so it is still firm. Leeks I cut into inch chunks and boil until soft but not breaking apart.

These go with my cherry coke boiled ham and a chicken crown. I will also make a sausage sage and onion stuffing.

We usually have mashed and roast potatoes (I'd be happy with just roast but the dc like mash) roast carrots, mixed broccoli and cauli cheese, sprouts with bacon (although may not bother this year as I'm the only one that eats them) sometimes we have peas too, and occasionally braised red cabbage.

Get a steamer then you can cook loads of veg on one ring. I have as much veg as I possibly can, but then I'm vegan and think veg is the best bit!

I roast as much as possible

as the chicken comes out of the oven a good hour and a half before eating, to rest the meat, I take the opportunity to then pop in the oven

all these have been peeped ready on xmas eve morning - ready to just pop in the oven

then cook peas in a saucepan

red cabbage is prepped previously and put in microwave

Rice and peas (obvs rice isn't a veg, but the gungo peas count as a 5-a-day)

Some very tame responses, normally posters fight to outdo themselves with outlandish vegetable creations.
I like green beans and baby carrots. I could not have cheese sauce with a Christmas dinner and broccoli does not belong on a gravied plate. Peas are ok, but only because I like them. Red cabbage looks nice but there's always too much of it. I cook sprouts but only to have as bubble and squeak the next day.

I would saute Brussel sprouts with green beans and leeks in one pan. Is there room to roast parsnips with the potatoes? Carrots too. Otherwise,boil/steam carrots in another saucepan, possibly along with brocolli. If you have a microwave, wack some peas in there.

Roast carrots and parsnips in oven. Shredded Brussels sautéed in butter. Cauli and broc cheese if feeling decadent. Mashed swede.

Don't do too much veg there's extra sides (stuffing, pigs in blankets)

Also Dh insists on corn on the cob.
