How many and what veg do you have on your dinner?

I have two oven shelves which will be cooking chicken (not doing Turkey) on one and roast potato / stuffing on the other.

Four hobs, one of which used for mash potatoes so that leaves 3 x hobs for vegetables.

What veg and how many types do you do for Christmas dinner?

I feel like I need to be selective due to the above so thinking:

Peas and carrots in one
Broccoli and cauli in the other - possibly with a cheese sauce
Then I have one job free - is that enough veg or should I do another?

Definitely get a steamer for your vegetables. If you get an electric one that will leave all 4 hob rings free for sauces or extra vegetables / mash.

Bring your meat out an hour and a half before serving time. Then your oven will be free for roasts/stuffing/pigs in blankets.

You can also buy universal oven racks if you want to give yourself and extra shelf in the oven. They're probably about a tenner off ebay or amazon. I remember my mum buying me one from Betterware catalogue back in the day 😂

I make my yorkies in advance and freeze them. They only then take 5 mins in the oven. So I put them in to cook when everything else is done and they cook while I'm serving up.

Electric steamer - you win this post!

Once the turkey is out the oven to rest, I’ll be firing:
Roast potatoes,
Carrots and parsnips
Stuffing,
Pigs in blankets
Yorkshire puddings (for BIL) into the oven
Sprouts will get fried off on the hob.

DH & DD eat meat, I'm vegan. Pork for them this year, nut roast for me.

Roast potatoes, parsnips, carrots, onion & chestnuts.
Boiled carrots for DD, also sprouts, broccoli.
Yorkshire puddings & sausage meat stuffing for DD & DH (the chestnuts are for me).

I do:

Parsnips and carrots...these are roasted alongside the potatoes all in the same tray together.
Sprouts on the hob

If having turkey I do red cabbage (made in advance and frozen then just microwaved on the day) or if having beef I do carrot and swede mash (that I buy ready prepped because the one from Tesco is amazing and just microwave).

I do
Cauli, white cabbage, savoy cabbage, swede (mashed), carrots, peas, sprouts, broccoli and also have Yorkshire puds, mash and roast potatoes, beef, turkey, pigs in blankets and stuffing with sausage meat and obv gravy. We also have apple sauce, mint sauce and cranberry sauce.

Oops forgot about about pigs and stuffing, these go in the 'top oven' which is a bit shit when it's used as anything other than a grill but works ok in this instance. Might also buy in red cabbage and/or swede mash that can just be microwaved Blush

Christmas Day is the one time we buy in quite a bit so get M&S cauliflower cheese & red cabbage, Waitrose stuffing & Lidl Xmas pudding - partly to save on prep but also to save on work on the day (cooking & washing up).
We have a small turkey or chicken and a rib of beef plus Yorkshire puddings. On the side it's steamed carrots, peas, roast potatoes & parsnips, bought red cabbage in the microwave and cauliflower cheese also bought in the oven once the meat it out. We also do a big tray of chipolatas and pigs in blanket plus 2 stuffings all of which go in the oven after the meat comes out. On the job it's just one pan for peas and carrots and a big roasting tin for the gravy.

Wonderful to see the variety of vegetables, what a lot of chopping!

We are very traditional I think seeing all this.
My view is the turkey, stuffing, pigs in blankets and gravy are the main event. Vegetables are the accompaniment to this and must not clash.

Therefore any vegetables in white sauces are out as they would congeal with the gravy. Personally I would never serve sweet corn with any roast dinner never mind on Christmas Day.

Every family has their own traditions though and they do change over time. Much wider variety of vegetables available now compared to a generation ago, so tastes change.

I’m doing dinner for 14 this year, it’s always into double figures, so don’t do a big variety of veg, but they keep coming back😂

Red cabbage out of Mark's which gets microwaved. This is perfectly fine. Peas and carrots and brussel sprouts in steamer. Maybe also some broccoli. My steamer has 2 tiers. I used to do roasted butternut squash parsnips and carrots cut up and mixed with wholegrain mustard and honey. Can be prepared a couple of days in advance but now just buy the trays ready prepared. As you can see I probably do too much veg but I love my veggies. Roast potatoes are most definitely done from scratch.
I have some of the new M&S frozen veg in my freezer which I may use. Tbh my days of spending hours preparing for Christmas dinner are gone. We now do roast lamb or beef. Plus this year there will be only the two of us. So no pressure.

Should add that however many veg I do cook, nothing goes to waste here. Leftover cooked veg can be reheated (in some cases) or go into bubble and squeak, soup, pie, all sorts of things. One of the reasons I love Christmas. One big effort to cook a meal on Christmas Day, minimal cooking and shopping for days afterwards!

We have turkey, roast potatoes, pigs in blankets, Yorkshire puddings, sage & onion stuffing, sweetcorn and Birdseye do mixed veg in steamer packets (we usually have peas, carrots and broccoli) that take two minutes in the microwave. We don’t like parsnips or swede, but I love sprouts. They have to be boiled to within an inch of their life, but I think they’re delicious that way. And perfect for bubble & squeak on Boxing Day.

I remember having mashed and roast potatoes as a child, but I never bother now. MiL always does roast and boiled (with the skin on), even with normal roasts.

I always do roast parsnips (in with potatoes). Then cauliflower cheese (my DS's favourite), carrots (my DD will eat them), Brussel sprouts and then a favourite of mine either mashed swede or red cabbage.

Roast parsnips. Par-boiled ( or bought frozen) then roasted with the potatoes (whipped out a bit early if they're particularly narrow at the pointy end)

Peas, carrots definitely. Broccoli and green beans if I feel like it.

Ikea has these sectional things that you dangle in a bigger pan, so you don't end up with the peas mixed into everything, then I whack a steamer section on top of that (also Ikea) for the broccoli and beans.

I don't do sweetcorn unless DS2 is in one of his fussy phases (I require 3 veg on his plate, and he has to at least eat some of each - fuzzy bit of broccoli only if strictly necessary. Note that he likes all veg, just sometimes decides to declare he doesn't)

Am planning. Roast potatoes and parsnips. In the oven once turkey comes out. Red cabbage. Heat in micro. Carrots on the hob. Gravy make day before and heat. Sprouts fried with chestnuts and bacon. Feel I have forgotten something. Oh yes. Skirlie (oatmeal stuffing) and bread sauce. Unsure re Yorkies

I go the whole hog and we tend to have parsnips, roasties, carrots, sprouts, green beans, cauli cheese, cabbage and celeriac (I don't like broccoli so that is banned!)
