How many and what veg do you have on your dinner?

I have two oven shelves which will be cooking chicken (not doing Turkey) on one and roast potato / stuffing on the other.

Four hobs, one of which used for mash potatoes so that leaves 3 x hobs for vegetables.

What veg and how many types do you do for Christmas dinner?

I feel like I need to be selective due to the above so thinking:

Peas and carrots in one
Broccoli and cauli in the other - possibly with a cheese sauce
Then I have one job free - is that enough veg or should I do another?

Roast potatoes, roast parsnips, braised red cabbage and apple, sprouts with pancetta, plain peas and carrots. Think it’s good to have a few bits which are just simply cooked given how much else is happening on the plate.

On Sunday roast we do all kinds like swede and carrot mash, mashed potato, mushy peas, cauliflower cheese, leeks, cabbage, red cabbage, etc. But for Christmas keep the veg more simple as we have the extra meats, stuffing etc.

My veg choices are:
Roast parsnips
Carrot and swede mash
Steamed sprouts
Red cabbage

When did braised spiced red cabbage become such a staple? I'm not keen on it at all and don't remember ever seeing it mentioned as a Christmas dish until the last ten or maybe twenty years.

Also not sure when lots of people started serving Yorkshire puddings with all roast meats, not just beef.

I've given up meat so will do cauliflower cheese for me and anyone else who wants some but wouldn't usually do this (everyone else will have turkey , stuffing, pigs in blankets )

Gosh! I was totally unaware of this until fairly recently. YPs only ever served with roast beef only in my family growing up (I'm 60).

Get a steamer then you can cook loads of veg on one ring. I have as much veg as I possibly can, but then I'm vegan and think veg is the best bit! Roast potatoes and parsnips Cabbage Broccoli Green beans cauliflower Beetroot (usually roasted) Carrots Peas Sprouts

So about ten.

Totally agree with this. Steamers are fab and are eco as well.

We use a steamer pan and cook the mash potatoes, sprouts, broccoli and carrots and green beans all together. We also have roast carrots and parsnips too. Sometimes we have turnip on the hob to mash too.

Stir fried shredded sprouts (in soy, honey, ginger and sesame seed dressing).
Steamed sprouts (for DH, a sprouts traditionalist)
Red cabbage.

Everyone gets to pick their fave veggies and I cook them, hence the random mix, but I think everyone deserves what they like on their plate at Christmas (the 7 year old loves mash :)

Sometimes, on the rare occasion I'm home alone, I have < whispers > a whole batch of yorkshire puddings with homemade gravy to myself for dinner... no meat, no veg, just the YPs and gravy Grin

I mean I do love yorkies so I'd never object to one landing on my plate! I'm not sure I'd have the oven space for a batch on Xmas day. Might think about it though!

Make one ring work twice as hard- steam your broccoli and cauliflower over the peas/carrots (I use my metal ikea sieve/colander thing for this on top of a normal pan)

Then make Cheesey leeks! Make em in advance then microwave on the day - thick cheese sauce over chunky chopped leeks and baked

Gotta have braised red cabbage too, my top tip is to use mulled wine and a tablespoon or two of dark brown sugar then just simmer for ages until tender and liquid has been absorbed

Microwave peas
Steam brocolli, cabbage and mange toutes,
Boil sprouts and steam cauliflower over it
Do carrots with a cartouche, butter sugar etc
Roast potatoes and parsnip
Roast in air fryer sweet potatoes, peppers and onions
(Not veg, but just as important, Turkey roasted, pigs in blankets and gravy!)

Definitely get a steamer for your vegetables. If you get an electric one that will leave all 4 hob rings free for sauces or extra vegetables / mash.

Bring your meat out an hour and a half before serving time. Then your oven will be free for roasts/stuffing/pigs in blankets.

You can also buy universal oven racks if you want to give yourself and extra shelf in the oven. They're probably about a tenner off ebay or amazon. I remember my mum buying me one from Betterware catalogue back in the day 😂

I make my yorkies in advance and freeze them. They only then take 5 mins in the oven. So I put them in to cook when everything else is done and they cook while I'm serving up.

  • dessert

That's it. OK we just have 4 people (our nuclear family), but we've never felt the need for endless veg, and certainly no mash (why does anyone need 2 kinds of potato in one course? Confused) or cauliflower cheese (too filling) or peas (too boring).

Surely yorkies are a staple with any roast dinner not just beef?!

We have three meats, often including beef, so could get away with that if it was a hard and fast rule but no, yorkies are definitely a must. My fave part of a roast dinner

We LOVE mash but couldn't do without the roasties so have a bit of both.
