Christmas Dinner Abroad

I’m looking for inspiration for a non traditional Christmas Day Dinner.

We’ll be in an Air BnB abroad in a climate that is on average 19-20 degrees. We have access to a decent kitchen and some shops nearby. I was thinking maybe a mediterranean spread or something on the bbq. I’d like to stay away from a large meat joint and the usual trimmings.

Ideally not too much work/effort and faff. And nothing that needs a million ingredients as I won’t have my own kitchen pantry to hand!

Baked feta, lamb koftas, Greek baked beans, grilled aubergine, pitta breads, humous and oven roast vine tomatoes.

Regional fish en papillote (bbq or oven) or Mediterranean roast chicken with pan roasted veg. Fairly simple and low input, but tasty all the same.

Roast vegetables! Why didn’t I think of that!

Grilled fish is a great idea too! humous is a must! I could probably pack a bag of cous cous to go with. Pitta I can’t source, but I know how to make chapati which would work.

I’m in Asia and will be on a fairly remote island. They don’t ‘do’ Christmas and I definitely don’t want to do the National cuisine.

When I was in the ME we always had a bbq on the beach with fish, shellfish and shawarmas. I miss those days!
