Can be a nut roast or something more inventive. Grin

Oldie but a goody. Rose Elliot's white nut roast with herby stuffing. Goes really well with roast vegetables, cranberry jelly, all the usual stuff.

Lovely

This is the best nut roast ever. I’m veggie with vegan relatives and tried looooaaads. This one is great as a loaf or made in a muffin tin. Freezes brilliantly. Love it to bits.

Beetroot and Kale Wellington - Best Christmas Dinner Ever! Goes amazing with cranberry sauce and all the trimmings

BillyAndTheSillies · 12/11/2021 20:00

I came on to suggest that @Mummyoply - my parents and siblings are vegan and this is what I make for them. They always ask for a double serving - one set that they kept frozen for during the year. Even had to do a doorstop drop of them last Christmas during lockdown.

madisonbridges · 12/11/2021 20:01

So, @AnneLovesGilbert, that's just nuts. I mean literally it's just nuts and a few breadcrumbs. A real nutroast. I'm going to give it a go. 🙂 Thanks.

AnneLovesGilbert · 12/11/2021 20:14

It’s amazing. Holds together really well, which is the problem I’ve had with several others.

I think cranberries in savoury food is an abomination so can’t speak to how it works with them in it but it’s lovely without.

I double it and make a loaf and about 6 or 7 muffins in silicon cases to freeze and whip out for Sunday roasts or because I fancy one. Carving/slicing something on the Christmas table is important I think. So I double everything but the soy which I reduce a bit as it’s very salty with soy and stock.

Hope you like it.

I make a new gravy recently, always a fan of generic veg granules, I made a veggie toad in the hole which had a gravy recipe attached and it was superb so I’m doing that this year.

Stock, flour, onions, mustard and soy (sub for Worcester) and it’s stunning.

the BOSH Wellington!

madisonbridges · 12/11/2021 20:46

@lochmaree

the BOSH Wellington!
I looked this up. Is that with mashed vegan burgers? If so, which burgers do you use? Or is it mushroom wellington?
StevieNicksscarf · 12/11/2021 20:51

@Mummyoply - do you have a recipe for the Wellington please?

Kayemm · 12/11/2021 20:54

This year I'm making this.

@StevieNicksscarf it's this one

I make a batch and freeze them, they taste just as good from frozen 😊

lochmaree · 13/11/2021 02:07

@madisonbridges we do the one with mushrooms and chestnuts. I didnt know there was a burger one! Will have a look!

StevieNicksscarf · 13/11/2021 08:42

Thanks @Mummyoply

The Bosh mushroom wellington is good. I had deja vu when i saw this thread then realised I'd answered it before:

You might find other ideas in the thread.

The raised pie in my post works well as a special Christmas dish as it goes with all the regular veg and a vegan gravy. The recipe has cheese but I've made it with non dairy alternatives.

lostinthejungle22 · 13/11/2021 11:19

Those beetroot wellingtons sound amazing, I will make them this Xmas! Thanks for the idea.

I don't like nut roasts, so no suggestions there. But one side dish has become a staple in recent years - Deliciously Ella's potato dauphinoise, potato and red onion slices baked in a savoury cashew nooch sauce, YUM!

Do you have a full recipe, I'd love to try a new gravy!
AnneLovesGilbert · 13/11/2021 11:35

It’s this one @lostinthejungle22

realfood.tesco.com/recipes/toad-in-the-hole-with-onion-gravy.html

I make the toad with veggie sausages, it’s become a regular meal.

For the gravy I use french’s yellow mustard and soy and add a bit more flour and a bit less stock and simmer as long as possible as were thick gravy fans.
