My OH is pescatarian and I thought it would be easier this year to do us fish/veggie type meals for Xmas eve and Xmas day. My question is if I did a fish main on Xmas day, likely a Wellington type thing, what sides would you put with it? I'm worried of overdoing it and things being too rich x

Roasted sprouts, sautéed leafy greens or broccoli would all be fine.

Maybe roast beetroot if you like them?

Boiled or roast new potatoes.

Or a gratin maybe?

Sides I’d do to go with fish would be a selection from
A combo of green vegetables such as peas, asparagus & broad beans,
Creamed spinach,
French style peas & lettuce
Buttered leeks done in the microwave
Carrots with whole grain mustard (microwave again)
Courgettes grated and briefly stir fried with garlic

For potatoes, Greek style diced herbed roast potatoes or individual gratin potatoes would work.

Green beans and roasted parsnips

I'm doing fish for our Christmas Eve dinner.

I'm doing Salmon with a pair salsa and a bit of sweet chilli

Side of asparagus and crispy smashed garlic spuds

Super easy and the spuds are sooooo yummy. My new go to instead of roasties!

I did some very nice Brussels and carrots tge other day. Shredded the Brussels and thin sliced the carrots in the food processor, added some butter and dill and stir fried. Delicious and I think it would go well with fish, probably salmon in partucular

Thanks everyone :) I'm leaning towards doing asparagus and other greens and some form of potato, carrots too x
