After speaking to a colleague about her Christmas cake plans I’ve decided to attempt my own this year. Do any of you wonderful Christmas lovers have a recipe you’d recommend for an ok baker?

I baked Nancy Birtwhistles last year, it was lovely. Previous to that i've done Delias. Whichever recipe i follow i always swop the mixed peel 🤢 for chopped nuts/ glace cherries!

I always use Delias. I make it in September and feed it for months and it's always rich and moist for Christmas.

Jane Asher's Last Minute Christmas Cake. It's never let me down, you can make it as early or late as you like. Early - you can feed it with more alcohol, or make it closer to Christmas. Best recipe I've ever used.

I always do Nigella’s and it’s never let me down. A good traditional cake. Recipe is in How to be a Domestic Goddess. I make it end of October each year and then cover in marzipan and icing just before Xmas.

I used to fo Delias bus moved to Mary Berry’s a few years ago and havent looked back. So moist and tasty

Hi, I'm a confident cook but I'm not a particularly good cake baker. I decided to make my own Christmas cake last year and a colleague recommended the following recipe which was very easy to follow. I bought all ingredients in our local Lidl and used spiced rum to feed it. It was absolutely delicious and I'm not a massive Christmas cake fan (my husband is). It was incredibly easy to make too.

100% “Nigellas Time Honoured Christmas Cake” which I usually customise…. i.e. switch the ratio of some of the other fruit in favour of more cherries because they are the best!

I think I had give the GH port and orange cake this year. Being making Delia one for years but 2019 hubby said it was a but dry then last year he said it was too crumbly. If he moans at the new one I might ask Santa for a new husband! 😁

@Poppins17 that’s what I did! And then couldn’t decide so thought I’d ask on here as I knew there would be a number of good recommendations! I haven’t fully decided but I’m edging towards Nigella as I’ve made a number of her cakes and they’ve all worked out as good as I could hope!

Whatever cake you make , if you make your own marzipan it is so much nicer than anything you can buy .

I use a Delia recipe and Amarretto instead of sherry . Good quality almond extract (Lakeland do a nice one )

@70isaLimitNotaTarget tried to make my own marzipan - it was the stickiest thing imaginable despite enormous amounts of icing sugar poured into it. I gave up in the end - never again!

I'm following with interest as I've decided that this is the year I'll make my own Christmas cake. I'm not a great baker so the simpler the recipe the better!
