If you parboil your potatoes today?

I've heard people here talking about par boiling the potatos for their roast potatoes. After you've par boiled them do you have to put them in the fridge?

I put them in the fridge, but leave them out in the air until they're completely cold and dry first.

Don't do it OP. They might go black, which has happened to me more than once.
