Boxing Day meal for family of 5 plus MIL

Mil is coming on boxing day. We are a family of 5, youngest ds 13.

She usually comes on Christmas day but we have changed logistics as we have a few vulnerable people in the family. She's a grumpy woman, last year she left her parsnips and asparagus because 'she didn't like it ' but made quite a disproportionate sized fuss about it.

We are having turkey and all the trimmings Xmas day and I don't really want to do the same 2 days on the trot. What ever I make there will be complaints so I'm not going to but tons of time and effort into it.

I'm after something quite easy but still a sit down meal. I just can't decide what to cook.

Any ideas would be much appreciated.

I'm lazy, Boxing Day is leftover day in my house. Plus chocolates. Somehow I don't think you MIL will approve.

Another vote for pie! I do the traditional boxing day leftovers recipe, but yeah ashore-bought one instead, if you like.

Alternatively, sticks a ham in the slow cooker (we love it in cider or coke) and just steamed veg, for ease.

I like the look of that potato and ham bake.

The boys love steak pie so we have that quite a bit.

Lunch is picnic food - sausage rolls, pork pies, quiche salad, coleslaw, potato salad and bread rolls. Left over mince pies, Yule log, trifle, and Christmas cake.

Dinner is steak pie (shop bought), chips and peas. Pudding is fruit pie (we like woodland strudel) with custard, cream or ice cream.

I want something that’s easy as we also have turkey and full trimmings on Christmas Day, and I do another roast (usually pork) on NYD.
