What do you eat on boxing day, its our first year flying solo (as a unit)

So I have DH, a 3yo and almost 1yo. Every year we have done christmas dinner ourselves, then gone to mums for boxing day where she'd do a full on salad with cold meat leftovers (plus extra like posh beef and ham). I like it, it's a great day, but not possible this year as my parents are vulnerable. I just cannot replicate the salad at home as for starters my kids will only eat the cucumber the bread rolls and the leftover stuffing... Secondly I just cannot justify filling my fridge with lettuce! It's just not big enough to fit all of Christmas Dinner bits and all of the salad bits in.

So what do you have, so I can poach a new tradition?

This is a helpful thread. I had planned to do roast beef, now I’m not so sure. I’ll be cooking so I may leave the beef for New Year and do a big salad with cheese, cold meat and home made chips.

We always have leftover christmas dinner for lunch, but not everyone will want a another full on roast dinner though so there's the option of leftover meat with egg and chips. And for dinner its a picky tea, cold meats, cheese board, bread, chutneys, chocolates etc.

Normally we have cheese and biscuits and leftover ham for lunch and bubble and squeak for tea.
This year it’s just the 3 of us on Christmas Day and DS has requested pizza so no bubble and squeak. I might do DH and I steak on Boxing Day.

We have a roast beef dinner. I make just enough on Christmas Day so there are never piles of leftovers to eat Boxing Day.

When it's just us we have turkey, ham and leek pie with any leftover sides from Christmas dinner. I make the pastry the week before and freeze it.

This year there'll be 12 of us so the leftovers won't stretch that far and I'm not sure what to do. Two of my guests don't eat cold meat either which makes things awkward.

this year we are having sausage rolls, left over pigs in blankets and nice bread. there will be a plate of chopped up veg on the table and I will do one nice salad for me and DH. Other else Christmas Dinner toasted sandwiches (turkey ham stuffing cranberry sauce strong cheddar - yum!)

In the evening we have a re-run of Christmas dinner with left overs. I always make too much!

Day after Boxing Day (and the day after that and the day after that...) is bubble and squeak and leftover meat and party food.

I have recently rediscovered bubble and squeak. I slice and fry onions until they start to go golden, then add the roast potatoes, roast parsnips and sprouts, all chopped small. If I’ve got left over stuffing or yorkshires I chop and add them - then fry it all until there are lots of darkly crispy bits. It is delicious, if I do say so myself.

Dh volunteered to make it once, and once all the veg was frying, he added stock Shock - so no crispy bits, just a sad, wet mess.

Bubble and squeak here. My mum always did cold turkey and stuffing with proper chips. I preferred it to Christmas dinner. I can't make chips like that, sadly. Cheese toasties for tea.
Oh, and a big home made trifle!
Love the sound of @scentedgeranium's biryani though.

Usually I’m cooking for a crowd so it would be roast beef on Boxing Day followed by bubble and squeak and cold meats the day after. Then turkey, ham and leek pie, turkey fajitas or curry, cold meat and chips for the rest of the week before a fondue and raclette on NYE. This year it’s just us so I’m considering skipping the roast beef (but I probably won’t Xmas Grin)

We also have another Xmas dinner. I reheat the turkey in the oven and we have mashed potatoes and left over bits. Leftover pud.
I enjoy it more than Xmas dinner.

Bubble and squeak goes really well with Patak’s aubergine (brinjal) pickle bizarrely!
It’s also nice with a fried egg on top.

I’m having bubble & squeak, cold turkey, DH’s home made stuffing and pigs. DH is torn between having the same, but with chips instead of bubble, or making a turkey & gammon pie.
