I have to take a plate of something to my works do tomorrow evening and am flat out of inspiration. Help!

I fancy taking something fresh/healthier as it's quite a nice contrast to the beige you tend to get at buffets.

Criteria;

Gluten free
No dairy
Doesnt need to be served hot
Not too expensive
Doesnt need hours to prepare and can be made 24 hours ahead

Hit me up with ideas!

Sliced tomato salad (or use multi colour tiny tomatoe if you can find yellow ones) - finely chop parsley and really thin onions. Dress with lemon and olive oil.

A couscous or bulgar wheat salad? Something like this?

Or a tomato based greek style salad (optional feta for those not dairy free?).

Or some stuffed peppers?

A selection of dips (hummus, baba ganoush, salsa some dairy free ideas, you could add a sour cream or taramasalata if some dairy is OK?) with crudites and flatbreads (GF if needed?).

A nice fruit salad made with tropical/soft fruit (bit expensive as out of season but it is a treat and you could bulk out with some tinned or frozen versions!), perhaps with some mint sugar and lime for sprinkling?

I make a Christmas starter of multi coloured tomatoes, melon, rocket, balsamic dressing and onion marmalade/ chutney. It goes down well here.

Beetroot (cooked but not pickled, usually found vacuum packed) and chickpea (tinned) salad with vinaigrette dressing, and spring onions.

Rice salad with soy and rice wine dressing.

Provençal salad, tomatoes, red & green peppers, new potatoes, green beans (frozen are fine) with vinaigrette dressing.
