What are you doing instead of turkey for your vegetarians? I’m open to cooking or buying in, but had been hopeful that the Waitrose beet wellington would fit the bill and in the test run it was not popular!

We love cashew nut roast (Rose Elliott recipe) which I make in advance and freeze beforehand. I have also made mushroom en croute when my vegan sister has visited and this went down a treat too.

Delia's mushrooms in Madeira in a Chou Gruyère Bun. Looks like a "show stopper" special meal and tastes like one.

I've found I can cook the buns ahead and freeze and also the filling.

Then just re-heat and assemble on the day.

Subs with vegan cheese/fats have also been successful but imho the original recipe plus a little crème fraîche and fresh tarragon have been the most tasty.

Probably a veggie Wellington for DD or maybe veggie suet pudding. Which I'll fill with mushrooms, shallots & chestnuts in a soy & marmite based veggie gravy instead of steak & kidney. We're pescatarian so will have fish. Maybe sword fish baked with cranberry & sweet crust

We usually buy the caramelised onion nut roast From Cook, and also cook a Quorn roast for the children. We tend to be low-key in Christmas Day as it’s just us and the kids and we like to keep it simple, but for other special festive roasts we make mushroom & chestnut Wellington or Moroccan pie. Both are lovey and festive, and always go down well with meat eaters as well as veggies.

Beetroot wellington sounds disgusting.

M&S do some good veggie Christmas options else individual filo parcels filled with chestnuts, cranberry sauce, Brie and some grated stir-fried root vegetables are delicious. Don’t forget vegetarian gravy too (Cranks have a good recipe).

It has quite a meaty texture, it's beef flavour. I wouldn't necessarily say it tastes like beef but it's got so much flavour! It's also really nice cold the next day on sandwiches

Aldi do a fantastic mushroom, stilton and cranberry puff-pastry pie thing - it's amazing. There's another one as well we've yet to try. I think asda or sainsbury's also do a lovely nut roast. I'll try and find a link.

I make the roast vegetable and mozzarella strudel from Delia's vegetarian book. It is very tasty and you can make it in advance so it just goes in the oven on xmas day.

I'm making this. I get a bit annoyed with veggie mains that are a meal in themselves - root veg,carb and nut driven. I love the trimmings so I want something to complement that. This is light, delicious, gives a veggie gravy, and goes with all the trimmings...

a few days before: roast some large portobello mushrooms and some Italian veg combo of your choice (aubergine, courgette, peppers) in large flat pieces.

day before: sheet of puff pastry flat. put the following in a central rectangle leaving plenty of margin for folding later:

thin layer of M&S nut roast
layer of mushrooms
another thin layer of M&S nut roast
layer of Italian veg
remaining nut roast.

cut knife lines diagonally up and down the margin of pastry into 2cm wide strips. fold these strips over alternately from either side to make a plait effect.

chill overnight. when ready to cook, brush with milk or beaten egg for a glossy finish and bung in the oven.

Boxing Day rather than Xmas but sis decided she wanted to be a veggie on Dec 21st- would totally respect this normally but not on the days I really don't want to revisit the supermarket! I ended up making a pressure cooker mudhroom risotto which was v well received

As a veggie I’m always happy with first dibs on the cauliflower cheese, veggie stuffing balls and Yorkshire puds! As long as there’s heaps of veg I think it’s plenty. But I suppose if you’re having guests young might want to push the boat out a bit more! M&S do some nice shove in the oven stuff

This gets served up at the in-laws every year as sil loves ir. It's just carbs with carbs. I hate it but have to move it around the plate while making polite noises. I've started bringing my own the last couple of years so "we can have two options like the meat eaters".
