What are you doing instead of turkey for your vegetarians? I’m open to cooking or buying in, but had been hopeful that the Waitrose beet wellington would fit the bill and in the test run it was not popular!

Oh - and when I have veggie haggis (I had one this week actually) everyone nabs some! It’s really very nice.

The Ottolenghi aubergine upside down cake is amazing and looks good too. www.theguardian.com/lifeandstyle/2015/dec/04/yotam-ottolenghi-recipe-vegetarian-christmas
It keeps well too so the rest if it can be eaten as leftovers.

hazeyjane I had Macsween veggie haggis a few years ago and really liked it. You can buy it online if it’s not in your local supermarkets.

is the turkey hot when it’s served? Or can I make it in the morning and leave it aside for later?

It’s normally at least warm, really cold turkey would be a bit miserable. But you do take it out and let it stand, covered, to absorb its juices. I’ve got friends who do an amazing turkey for thanksgiving, I’ll ask them how long it stands for. Obviously you then have to carve it too, to I guess it’s never hot, but I don’t think it’s normally got down to room temperature either. Are you doing a whole bird?

I have an answer on the turkey:

It stands for at least 2 hours, but will still be warm after 3. We usually cover in foil and put a few tea towels over it.

I’m cooking a breast roll - same deal?

TheVeryHungryTortoise · 08/12/2019 10:26

Usually nut roast or a goats cheese and caramelised onion pastry tart for us.

TheLidoOfThighs · 08/12/2019 10:27

I would have thought so. Maybe wrap it a bit more because it will be smaller.

Apparently this is the best recipe www.bonappetit.com/story/making-perfect-thanksgiving-turkey#

ItsChristmaaaaaaaaas my thanksgiving friends who put on the most amazing spread every year sounds genuinely horrified that have got to do three main courses. They recommend a lot of planning and prep for your sanity!

Oblomov19 · 08/12/2019 10:34

Taking notes. Most of these sound yummy. I need to make vegan stuff aswell for my friend.

ItsChristmaaaaaaaaas · 08/12/2019 12:28

It’s a necessity to cover all the dietary requirements for us and the guests!

I once got throughly confused and cooked four mains for three people (ah the sleep deprivation days)!

But then mum cooked for an army every day (large family) so mass catering holds little fear for me! me.

TheLidoOfThighs · 08/12/2019 12:45

Yes, I get why you're doing it Smile Just hats off to you!

ItsChristmaaaaaaaaas · 08/12/2019 13:06

Just wait until Christmas day with my thread ‘AIBU to get takeout for Christmas dinner?’

DH and I have been vegetarian for years and Dd for the past 3 years . DS eats chicken and fish.

If we have guests , I do a nut roast ( frozen then cook from freezer)

Pre-DC I did the Delia Roulade (it is delicious but I don't want something that needs last minute timing and the whole oven to itself)
Filo pastry cases with mushroom filling
Cheese choux ring

But they're nicer another day with baked brocilli and new potatoes

If it's just us :
Lidl Cashew and Carrot roast + Quorn Roast + Linda McCartney roast (not the beef one - ir's more like stuffing)

So with the roast potatoes , parsnips, pureed turnip, carrot sprouts with chestnuts, 3 types of Vegetarian Roast to choose from, cauliflower cheese, red cabbage ......and a Yorkshire Pudding Xmas Grin .
That's plenty !

It doesn’t. I make —four— it a day or 2 before and just heat in the oven on the day. 1 gets kept in the fridge to go with leftovers and the others go in the freezer —for summer—.
