What are you doing instead of turkey for your vegetarians? I’m open to cooking or buying in, but had been hopeful that the Waitrose beet wellington would fit the bill and in the test run it was not popular!

My go-to for many years has been eggplant rollatini. It's basically strips of breaded eggplant which are filled with ricotta and spinach and then rolled up and baked in the oven with marinara and Parmesan and mozzarella cheeses on top. Even the non-vegetarians in my house love it and friends of mine will often request I bring a large tray of it for holiday parties as well. I also do a spinach and portobello mushroom quiche with sundried tomato pesto for Christmas morning breakfast to serve alongside the typical cinnamon buns.

It's just carbs with carbs.

I leave out the breadcrumbs and there’s minimal flour in the roulade bit. It’s mostly egg, milk, butter and cheese. So it’s really only the parsnips, again offset with cream and butter. So not really that carby at all.

It’s funny that you’ve replaced it with something wrapped in pastry which is far more carby!

I never bothered doing anything special for myself when we ate at home for Christmas. I did lots of options previously and decided that actually what I wanted most was all the trimmings - the roast veg and potatoes, Yorkshire puddings, stuffing, cranberry sauce etc. And most of the veggie mains were just surplus to requirements. So I did just that - made myself a huge Yorkshire pud and put everything else inside it. Dh and dd eat meat so it was only me having the veggie option.

We now go out for a curry so don't bother cooking at all.

I'm vegetarian. I always do a nut roast for me (plus lots of leftovers). I know it is thought of as a bit old fashioned but I love a but roast!

I agree that the Waitrose beet wellington is vile, I reviewed it with words to that effect and they refused to publish the review! 😂

I blitzed some mushrooms cashews and onions and stirred in a little oil and flour and baked - it came out kind of like a delicious stuffing (but might need another ingredient to stick together better). Might work inside puff pastry. Me and dd agree it's our new favourite and works well with all the trimmings.

Personally I love a good nut roast. I know it's a bit of a cliché, but hey hum. I've had a brie and vegetable wellington as well before which was nice.

Beet wellington does sound a bit odd.

Maybe she puts in extra breadcrumbs? I also find parsnip very carb'y. It might be nice without the breadcrumbs though. I'm not concerned with carbs per se, I just like a good balance, whereas I find the roulade very stodgy. Tbh, sil isn't the best cook so maybe it's just her one.

The pastry plays a supporting role, rather than the starring role. I use puff pastry and really fill them. There's enough stuff in them to balance the pastry.

I know this is a veggie thread but does anyone have any salmon recipes that would go well with the rest of a Christmas dinner?

I’m struggling to come up with something and doubt my guest will be happy pouring gravy over her fish.

I low carb the rest of the year. Creamed parsnips are the reward.

Mine is really light, and the meat eaters have it as a side too. Maybe something is going wrong with her egg whites. 🤔

I eat a reasonable amount of carbs all the time. I just try for a reasonable balance.

Quite possible. As I said, she's not a good cook so I try and avoid her cooking. She is a veggie so it's not that she normally cooks meat.

A typical roast with all the usual veg but usually add cauliflower cheese to the side and a big old veggie haggis

Try it out, veggie haggis is sooooooo delicious. I don't cook it in the oven. Just toss it into a frying pan with a touch of oil and cook on low till it's all heated thru and crispy on one side. Unreal! Xmas Grin

I'll be having M&S sweet potato and red pepper sausages with all the trimmings. The only veggie sausages that are actually made from vegetables.

You're the only person suggesting anyone might be offended.

A derail is moving off the original topic, which is what you did. It's not a hanging offence, just a bit irritating.

Asking meat eaters about salmon, or other types of meat, would make more sense than asking veggies. A thread of your own would be more likely to be seen by people who eat/cook salmon.

Jeepers, you must find life very difficult in general, if you think typing a quick post is "going to great lengths" Grin

But yes, you're right. This is a derailment, which I'm sure is mildly irritating to some readers/posters. I'll abandon it and carry on enjoying the veggie ideas.
