I swear by Delia, my son made it today as I woke up with a bad back, it looks and smells gorgeous. I leave out the treacle, because it's horrid, and make it with dark brown sugar.

I need to know this too..

We always do Mary Berry's traditional Christmas cake. It's the food of the gods.

I swear by Delia's too. I make it exactly as she says if I have all the ingredients, but add long as you keep the proportions the same you can put any dried fruit in there.

I've just done Darina Allen's. The batter tastes amazing.

Another vote for Delia here. I also don't worry too much about have the exact amounts of the different dried fruits and peel and just buy mixed as it's easier. I also feed it with different things each year. Cherry brandy this year.

Thank you everyone I’m giving Delia a go !! ( I’m sure she will be delighted Grin ) might also make the Mary berry one maybe

I do the BBC good food make and mature cake. It's so easy because you don't have to soak the fruit, you boil the fruit with the butter, sugar and brandy and then just mix it into the dry ingredients and add the eggs, it's so easy and delicious!

I do the Mary Berry one but add extra walnuts and a bag of dried apricots. I also pop the juice of the oranges over the dried fruit to soak with the brandy. I tend to soak the fruit longer-a week or two, and add additional brandy to this but it always comes out the most perfectly moist wonderful cake.

Oooh I love the Nigella boil one. I add or take away ingredients according to what I've got.
