What's your favourite leftover turkey recipe?

Despite best efforts we have a ton of turkey (from crown) leftover and we'll never eat it all in the next day or two.

What are your favourite (ideally freezable) leftover turkey recipes?

Not actually a recipe but if can slice and put greaseproof paper between the slices and then into a freezer bag into the freezer, it means you are only peeling away one slice of turkey at a time and then can eat it after defrosting either in a sandwich or on its own.

I didnt do a plated traditional dinner this year as such as was only me and partner was supposed to be here but was ill so i had the Ross Gellar Moist Maker sandwich from Friends

I live for leftover turkey. I deliberately buys turkey big enough to offer two or three leftover meals Blush

This Turkey curry is awesome. It uses leftover mashed potato. Great for kids, not very hot and can hide veg in it. I usually chuck leftover parsnips, sprouts, broccoli in as well.

Turkey
Stilton (always left as no one likes it but it's lovely in this recipe)
Peppers
Mushrooms
Onions
Broccoli
Double cream
Pasta
Black pepper

Don't worry about quantities- I put in a 250ml carton of cream which is my preference.

Shred or chop the turkey meat. Fry off the veg in a little oil, add the broccoli last. Then add the double cream, simmer for 5 mins and then add the broken up Stilton. Don't boil, just simmer on a medium heat for 10 minutes. Whilst simmering, cook your pasta separate.

Once pasta is cooked, drain, but retain about 2 tablespoons of the starchy water. Add black pepper to your Stilton mix to your taste, then mix in the pasta.
Even my kids love this!

I made Delia’s Creamed turkey en croute yesterday, and today I made what I thought was turkey curry but then added Marsala to it —so it was a bit weird— .

I have enough left for a round of sandwiches, if anyone is still keen. I’ve also have enough stock and root vegetables for a lovely soup.
