just that really - how are you doing your Brussels sprouts (nearly typed BS then)!. Any other tasty veg side dish recipes for Xmas day? I was thinking about Jamie's creamed spinach dish on last night's Italian Xmas but anything else any one swears by for Xmas day with turkey?

Sprouts - I roast them with olive oil and garlic. They're fab.

PurplePotatoes · 20/12/2017 20:22

Yes, roast them! It totally changes the taste. Even my sprout-hating mum is a convert!

Fiere · 20/12/2017 20:24

Cut into halves, toss in salt, pepper, a little olive oil and balsamic glaze - amazing!

PurplePillowCase · 20/12/2017 20:29

whole
little butter in frying pan
low heat
some bread crumbs, pinch of cinnamon, sugar
fry until slightly caramelised outside.

Mashed with butter and black pepper and squirt of lemon juice....

BertieBotts · 20/12/2017 20:32

Anything roasted or fried - don't boil them to death basically!

They go well with bacon and/or garlic if you're looking to add flavour.

AdaColeman · 20/12/2017 20:41

Cook as normal, but slightly under done. In a frying pan fry some bacon lardons, and halved precooked chestnuts, when they start to colour, tip in the sprouts. and toss well keeping turning for a few minutes, till th spouts are heated through.

I also like puree of sprouts which I make with a mouli, as you get a rich sprout taste. Add cream or butter, and some grated nutmeg.

TossDaily · 20/12/2017 20:43

Lightly steam them.

While they're steaming, melt butter in a frying pan with pancetta, olive oil and garlic.

When the sprouts are lightly steamed, chuck them in the frying pan along with some vacuum packed chestnuts, flat parsley, a dash of sherry and seasoning.

Bloody gorgeous. Even better the next day.

Fiere · 20/12/2017 20:56

I should add - then you roast them! Grin

Annwithnoe · 20/12/2017 21:03

Less people that like them the more for me. Yum.

JMAngel1 · 20/12/2017 22:05

Tempted to do trial run roast vs pancetta ideas or is that too sad?!

kikibo · 20/12/2017 22:05

Boil or steam until cooked then in a frying or saucepan, melt some butter, toss the sprouts in it and sprinkle with nutmeg.

That's how my Belgian grandma used to do them. Yummy

Shredded, cook pancetta till crispy then put the shredded sprouts in mix together and leave on a low heat until cooked. I hate sprouts, did this last xmas and had third helpings!

Wh0KnowsWhereTheTimeG0es · 20/12/2017 22:30

Stram then slowly roast. No fat, I can't bear greasy veg.

Hippadippadation · 21/12/2017 17:54

I do what Ada does with the lardons and chestnuts. Delicious. Although I often eat them outside of christmas roasted with garlic.

ElenaBothari · 21/12/2017 17:56

I mainly steam them, meanwhile in a dry pan fry some flaked almonds till they're nicely brown. Then add some olive oil and the Brussels sprouts to the almonds.

AdaColeman · 21/12/2017 18:01

kikibo Us Belgians know what's good! Wine

BroomstickOfLove · 21/12/2017 18:01

I shred them, cut some bacon into lardons, stir-fry the bacon, add the shredded sprouts, toss them around the wok for a while, then chuck in some white wine, wait until it's almost all evaporated and then add lots of black pepper and serve.

profpoopsnagle · 21/12/2017 18:09

How long would you give them to roast?

BertieBotts · 21/12/2017 19:34

No idea, I normally just google it.

AGnu · 21/12/2017 19:40

Maple glazed with chestnuts & I sprinkle crispy bacon over the top.

goose1964 · 22/12/2017 22:51

Get red ones, they are less disgusting than the green ones !
