I never get this right - either there’s loads left over that gets chucked away, or I feel like there’s something missing off the plate. What do you do? (besides roast potatoes, they don’t count!)

We definitely have mash plus roasts. Big Irish family of potato lovers!
We also do Brussels, carrots, peas, parsnips and broccoli.
So excited for Christmas Dinner! Best part of Christmas for me.

I feel rather inadequate reading some of these vegetable lists.
I do roast spuds and roast parsnips.
Carrots (batons) finished with chopped mint, salt and pepper, a little sugar and lots of butter.
Sprouts.
Bread sauce, lots and home made with butter and cream added.
Pigs in blankets.
Sausage meat stuffing.(cooked in the breast area of the turkey)
Giblet gravy.
Cranberry (from a jar)
So many people have red cabbage. Don't you find the flavour rather strong with the turkey? I must say it's not my favourite thing, but perhaps my recipe isn't very good. What's the secret?

I do the Nigella Cherry Coke ham on Christmas Eve and cook the red cabbage in the juices on Christmas Day

Christmas day will be roast carrots and roast parsnips, sprouts and possibly peas or green beans. But it's only 4 of us.

Nyd will be roast parsnips and carrots, sprouts, braised red cabbage and either brocolli or cauliflower. I might do cauliflower cheese.

And roast and mash potatoes both days.

Sprouts, roasted carrot and parsnip, broccoli, cauliflower cheese. No mash. Roasties only. Also Yorkshire puddings and chestnut stuffing as well as pigs in blankets and pork stuffing balls.

This thread is making me so hungry! Thankfully dinner is almost ready.

We usually do cauliflower cheese, peas, carrots, Parmesan roast parsnips and Brussel sprouts.

We do red cabbage on Boxing Day.

I never think of making Bubble and Squeak. Will def do that this year. Also really like the sound of the creamed leeks.

Braised red cabbage - as you can make it two days before and therefore just heat up on the day

Green beans - again easy to blanch fir just over 5 minutes

Brussels, cauliflower and broccoli 🥦

Then roast parsnips and carrots 🥕

I love bubble and squeak, so we eat this for the next three to four days with cold meat and pickle

I just mash up all the vegetables in one saucepan then keep in Tupperware in fridge.

Easy cooking 😉

Apart from the roast potatoes, we will be having:
Roast parsnips
Sweet potato mash
Sprouts (unadulterated with bacon, chestnuts etc)
Carrots and peas (only veg my husband will eat)

Plus cranberry sauce, bread sauce, pigs in blankets, pigs without blankets, bacon, chestnutty stuffing, gravy and turkey.

Best way to reheat mashed potato is to reheat in the pan. Add a little extra milk/butter/cream and it tastes just as good as you first made it. I really don't like it microwaved. I always make more than we need for a Sunday dinner so we have some for Monday or Tuesday's tea.

I reheat mash in a slow cooker, it will keep it warm for hours. Just add a bit extra milk and butter

Carrots, sprouts, parsnips. Too much faff to do anything else. And only roast potatoes - lots of lovely crispy ones.

I don't know how people manage to do lots of different veg and three kinds of potatoes as well. Either they must have multiple ovens/hobs, or else they must cook in advance and reheat, which sounds a bit bleurgh to me. Our veg are all done last minute, straight from pan to table.

Lyana, I don't roast them together but it's an idea. Might try that this year. I cut a slice from the top of the pepper and remove the seeds. I paint the outside with olive oil and roast in the oven for about 40 minutes. I could distribute slices of pepper among the parsnips and roast them together...
