I never get this right - either there’s loads left over that gets chucked away, or I feel like there’s something missing off the plate. What do you do? (besides roast potatoes, they don’t count!)

Oh god I always go overboard! I think we have the must-haves (roast potatoes, parsnips, sprouts, red cabbage) and then over and above those we usually have carrots, broccoli and cauliflower cheese. I’m completely incapable of stopping when it comes to Christmas dinner- I just keep getting veg out of the fridge and preparing it until there’s none left, and then I don’t have enough bowls!!

I’m Xmas Grin at “never knowingly undercatered”. I could try my absolute hardest to under cater and I still wouldn’t manage it. There would still be enough left for several more meals for the rest of the village.

Anyone fancying any creamy style accompaniment please don't bother with cauliflower cheese, do creamed leeks THEYLL CHANGE YOUR LIFE!!! (in a great way)

Fry in butter thinly sliced leeks and couple of shallots til soft
Splash white wine, cook away
Big glug glug of double cream, spring of thyme and a load of gruyere and Parmesan on top
Bake in oven 20 Min

Amazing!

We are paring it right down this year as it’s a waste otherwise.
Just sprouts and braised red cabbage.
But..will also do a v small amount of peas and carrots for DS as he won’t eat the other stuff.

Roast Potatoes (loads Xmas Grin Maris Piper
Roast Parsnips, sometimes in breadcrumbs and vegetarian parmesan
Carrots- just steamed
Sprouts and Teddy Bears Noses (chestnuts)
Cauliflower Cheese
Pureed Turnip
Red Cabbage (bought - only like a spoonful so not worth making loads)
Peas for DD
Yorkshire Puddings or there would be mutiny from DS
Gravy (vegetarian) made with the vegetable water

No cranberry sauce, no mash, no bread sauce, no honey on anything

My Christmas VEG staples are mashed swede, parsnips, sprouts, sautéed leeks, roasted carrots with garlic, red cabbage and roast taties.

Roast potatoes, roast parsnips, roast carrots, sprouts, broccoli, peas. That's pretty much our staple veg for a roast. Sometimes I will do cabbage and cauliflower cheese. We have a bigger kitchen and a double oven this year so that makes things easier.

Green beans for those who don't like sprouts.

I'd love to have cauliflower cheese as well but don't think I'll have enough oven space.

I love leftover veg. It aways get eaten or used up in a fritata or fritters or veggie pasta bake or something.

I do roast potatoes, mashed carrot and swede, sprouts (steamed then fried), roast parsnips and red cabbage. There's usually tonnes left over. Most gets eaten the next day or turned into soup.

Runner beans
And a handful of sprouts for my great aunt.

Any veg left is made into bubble and squeak boxing day/the day after.

Leftover veg gets put in a dish in the fridge, then a couple of days later we cook bacon and onion, chuck it in the dish with a cheese sauce and bake. Then serve with some roast potatoes. Blimin lovely Grin

We usually try and mix up the veg but over the last few years we have ended up with the same: parsnips, red cabbage, carrots and sprouts.
Over a conversation with family it transpires that no one is that fussed about any of the above so this year we are having: black kale and garlic, green beans, sweet potato and peas.

You've got to have too much veg so you can make bubble and squeak and have other leftovers the next day!

As well as roasties, we have carrot, broccoli, roast parsnips and braised red cabbage and sprouts. Apart from the cabbage DH makes bubble and squeak on boxing day and then until he runs out of veg.
