Will this cake keep til Christmas? Recipe says not unless I freeze

So I made this cake at the weekend, not my usual recipe but had unexpected visitors and this one had a shorter cooking time. Only after baking it did I realise it says it will keep for up to 2 weeks or up to 2 months frozen. I don't particularly want to freeze it.
I didn't add the marzipan and haven't made the florentine topping. Am hoping this is why the shorter time. It's wrapped in greaseproof and over wrapped with foil and is in a box.
Advice please experienced cake makers ! I don't want a mouldy or off cake, will open it weekly to feed it, so can check. Thanks

That looks delicious OP. I'd say the ratio of dried fruit:cake mix is quite low for a fruit cake - a trad Christmas cake would have almost twice that amount of fruit, and that's what helps preserve it (or sugar). So that could also be a reason it says it only keeps for two weeks, as well as the topping. What you could do is "feed" it with booze every few days as you would with a normal Christmas cake (I know it's already got rum in it, but again not as much as a traditional one - so if you top this up it might help preserve it until Christmas?)

Oops sorry OP, I didn't see the last bit where you said you were feeding it anyway. If it's boozy + well wrapped it might be ok.

Thank you. It did have extra fruit in as I'd already soaked the fruit for Delia's recipe (my usual) but lost a few hours to visitors and needed to get it cooked on Sunday. Oh well, will feed it and keep an eye on it

I bet it will be ok then, don't you? Hope so! It looks like a nice recipe Smile

Thanks - I can't see why it shouldn't but then panicked! I think you are right about the volume of fruit so hopefully will be ok

If you feed it generously it should keep but you'll end up with a wet cake.Id eat this one and if it's nice make another, if not a mincemeat cake tastes almost identical to a traditional cake but can be made last minute

Why not freeze it?
