DH has asked if I'd make a Christmas cake for DS's primary school class - if I made my usual one but left out the nuts and brandy and only used fondant icing in place of marzipan & royal icing, two children still wouldn't be able to eat any so I would like to make a vegan one that the kids with egg allergies will be okay with.
I've seen recipes using apple puree and oil in place of eggs and butter but would love to know if anyone's got a tried and tested recipe that definitely works?
