Buffet food ideas for the 27th

On 27th December we usually have another Boxing Day type dinner with cold meats mash potatoes and pickles etc.
Last year this was just too much hard work having done it the day before for 12 people.
So we are looking at doing a buffet with the leftovers plus a few other items.
What do people suggest? And if things can be made ahead of time and frozen that would be ideal!! Plus ideas for desserts

For desserts I would go light and creamy to contrast with puddings on Xmas day So maybe pavlova with lots of fruit? A light cheesecake (if such a thing exists?) Something involving chocolate?

For the buffet we always stick in a load of jacket potatoes to have with cold meats, salad, leftover cheeseboard and chutneys. Really easy and lovely and comforting.

Massive massive cheeseboard with lots of grapes, biscuits and lovely part baked bread which can be finished off in the oven so it’s warm would get my vote.

—And cheap frozen sausage rolls straight from the oven which are basically an excuse for hot buttery pastry with very little actual meat in them—

Great ideas! Jacket potatoes are so easy and can be cooked while we go out for a walk.
Leftover meats, huge cheeseboard that can be picked at throughout the day....,
Creamy desserts will make a change from the heavy Christmas pudding!

I cook extra stuffing just to see us through several days of picky buffets. Stuffing on toast yum!

My niece brought a huge tiger bread to ours last year. She had scooped the middle out and popped a Camembert cheese in the middle. She had cut the sides so the cheese ran into the bread. I think she called it a hedgehog. Anyway it was delicious, very filling and a great centre piece for the buffet. Homemade sausage rolls go down well here as well.

I’m totally stealing Fourpawswhite ‘s nieces baked Camembert for Boxing Day. My mouth is watering just thinking about it!

We usually do a naice ham, jacket potatoes and lots of picky bits.

Hedgehog bread is awesome and so simple.

My mum always makes and freezes a raised game pie, with cranberry rather than pastry top, that comes out for a buffet over Christmas time.

Or you could make a freeze chilli, chicken curry or fish pie. Some would work with jacket potatoes.

How many people are you cooking for? Are they guests who are likely to eat lots? I’ve hosted buffets around that time and skinny types are often avoiding food after 24th-26th!

Please do not buy ready made sausage rolls Delia Smith's are so easy the one from her chrismas book and easy to make in advance.

olives, chutneys, some anti pasti, regular ham, part baked rolls heated up in oven to crisp, pork pies with pickle/cranberry

Such lovely suggestions, I’ll definiteky be doing the Camembert in tiger bread! Plus a cheese board.
The pie idea is great too and one that can be frozen before hand so that would work well.
Can cheesecake be made and frozen?

Yes it can.

I usually do a big pot of soup with a buffet.

It’s filling, hearty and can be used as a “starter” before the buffet “opens”.

I’ve got a huge le cruset pot that I put on a fondue stand so the soup stays warm.

Something like bacon, tomato and lentil would be lovely with the cheesy tiger bread.

I generally think after Christmas I look forward to lighter options so I’d serve lots of nice salads, maybe some pate, I make a couple of nice quiches that can be frozen and usually have a plate of smoked salmon/salmon terrine.

Lots of nibbles like olives, stuffed peppers, stuffed vine leaves, giant butter beans in tomato sauce etc can all be bought in bottles and just decanted on the day. It’s definitely worth thinking beyond the freezer for items like this.

There’s a lovely recipe for winter pavlova on the Waitrose website and it’s utterly delicious.
