Hmm, have never done stockings for adults but would quite like one containing:
Nail polish
One of those impossible puzzles
Bedsocks (though in fact they are my main present this year)
Pretty writing paper and envelopes
Trashy novel
Bead bracelet
Apple, tangerine
chocolate coins (Hanukkah reference)

I theme the stocking in our house and that makes it a bit easier.

This year my dd(3) has a frog themed stocking my dn(5) has a fish themed stocking and my dh will probably end up with a tea themed stocking

DH usually gets:

Coffee is a good idea! DH (French) is an addict and insisted we buy one of those machines that grinds the beans for you (coffee is lovely mind, I just finished my cappuccino). I will look out for a packet of nice beans at the NEC festive gift fair in November

Delta - if you have an arco near you there brilliant for coffee and will sell you small packs so your dh could have a few different ones to try, I used arco in Staffordshire when I did dh a coffee advent calander, as I clearly have too much time on my hands
