Christmas (summer) pudding that travels well - any ideas?!

We've already got trifle and pavlova.

Difficulty: driving 300 km on Xmas eve. Must be able to survive some jolting & non-refrigeration (although can be packed in esky with ice).

Must be a summer dessert. (I'm in Australia).

Does anyone know a knock-their-socks-off summer recipe, please??

Can you take something that is cake based rather than pudding like so it's a bit more hardy?

While you may be in the warmth, would it look good to have some of the white Christmas nostalgia with something like a cake decorated like a snowman or similar or even cup cakes or biscuits? Some great ideas online.

Lemon meringue puddings.

Like lemon meringue pie, but without the pastry. Bake in individual ramekins and transport in cupcake box. Make more 'grown-up' by adding limoncello or other liqueur of choice to the lemon curd. Don't make too sweet, then it's sharp and refreshing after over-indulgence of the feast.
