What Cake Should I Make for Xmas?

I picked up a lovely gingerbread man-shaped cake pan from Nordic Ware in the sales last year and can't decide what cake to make in it to take over to MiL's for Xmas this year for post-lunch tea.

I don't have a huge repertoire of cakes - my best recipe is probably marble cake but it'll mean the Gingerbread Man comes out all marble-y coloured.

On the other hand I don't want to make a plain sponge and do proper icing because that feels more birthday and a bit too kiddy (it's all grownups at MiLs at the moment) but I will add a bit of white icing on his cuffs and maybe Smarties for his buttons.

So any cake flavour ideas that would work well in a shaped pan would be very welcome! :)

Nigella's Clementine cake. Easy to make and very festive. It's also gluten free because it uses almond flour. All the grownups I've given it to loved it, but it might be a little bitter for smal kids.
It's like Breakfast Marmalade sponge cake. Would look good in your mould too, as the colour is dark orange.

The recipe says to boil the clementines for 2 hours. Ain't nobody got time for that! I just microwave them for five minutes.
