What do you prep in advance?

I've got 10 for Xmas arriving on 23rd and (finally) leaving on 27th. I like to try and get ahead as much as poss as it's my family and they are not as domestically orientated as my In laws.
What food do you prep in advance?
23rd I'll do soup/savoury muffins for lunch. Then we'll eat out in the evening
24th - late breakfast/brunch with cottage pie -+ veg - I can make this in advance
25th usual turkey ham, yorkshires pigs in blankets, veg stuffing etc

26th Boxing Day buffet leftovers

I tend make most things.What can I make in advance and reheat on the day? Especially veg

Stuffing and bread sauce - both freeze well a la Mary Berry.
Lots of people doing Jamie's get ahead gravy.
Mary Berry also preroasts the potatoes on day before so they only need 15 mins on the day - tho i read on here today that you can also freeze them.
Ditto for a medley of carrots, beetroot and parsnips.

It's all the veg peeling that gets laborious for those numbers. Buy a few extra peelers and get other people helping!
