Turkey nuggets are quite nice - just dip leftover chunks of turkey breast in egg then in seasoned breadcrumbs and fry until crispy. Kids like them!

I saw Kevin Woodford on BBC Breakfast doing some that sounded quite nice- Turkey Hash Cakes (presumably not that sort) and soup. The recipes are here .

Turkey curry - turkey(obviously)
1 tin or 2 of heinz cream of tomato soup
veggies
half a jar of pataks paste
bang it all in slow cooker for all day absolutely gorgeous or cook on a low heat in a pan.

Turkey in beer batter
Turkey (again obviously)
batter mix
half a tin of beer/lager mixed into batter mix dont worry that it will go frothy its meant to.
Shallow fry

last year I made a pie with leftover turkey, ham and cream with puff pastry, was delicious!!

Oh no, turkey soup. My dad used to love turkey soup, and we'd be eating it till about Easter. DH also very keen on boiling things up (which always smells disgusting while it's being boiled up, though the finished thing tastes fine), but will have to limit him to one or two batches of soup.

ditto the turkey and ham pie - delish. I also like that Indonesian(?) dish called Bang Bang chicken but with turkey obviously, with satay sauce, cucumber and lettuce. Actually, I prefer the left overs to the Christmas dinner itself. I also make turkey hash cakes, Tatum and they are very nice

Just remembered a dish my MIL always makes which is basically a sauce of garlic, creme fraiche and whatever fresh herbs she has to hand, maybe a splash of wine and slices of turkey warmed though in the sauce. Serve either with rice or salad and garlic bread. You could vary the sauce flavour by adding mustard or tarragon would be nice. Actually stuff like this and turkey soup is the only reason I buy a whole turkey!!
