This is the first year we have hosted xmas. DH hates brussels and doesnt want to have any xmas day but our guests will expect them so trying to find a way of cooking them to make them more bearable!

Any suggestions? I vaguely remember reading somewhere about cooking them in Honey and caramalising them. But I may have just dreamt that!!

Agree macnab, I never cross them as it lets far too much water in and they get soggy and overcooked. We remove the outer leaves, simmer for 5 mins (this can be done at any time in the morning), then just fry them up with butter and chestnuts a few mins before serving.

Had some home grown ones at the weekend (smug) and sliced them finely and stirfried in butter and olive oil with some black kale and a clove of garlic that I whipped out before serving and some chilli flakes. Made sure they went a bit brown in the pan and they were really lovely. Never tried them like that before but will do it again.

At Christmas will just steam them as too much going on to stirfry or roast. Also its a nice contrast to everything else.

All these fancy sprout recipes Grin I'd get killed in our house for doing them like that! Boiled to almost mush, with lashings of butter and salt.
