Veggie something instead of bacon/smoked salmon

We're having Xmas brunch of bagels with smoked salmon, cream cheese, and/or bacon. However, I've just found out my veggie uncle is joining us. But I'm not sure bagel and cream cheese is enough - we'll all be having something else with it. Can you think of anything else I can serve a vegetarian with bagels that is Xmas brunch-worthy? TIA Smile

Sticking with bagels.. Perhaps some avocado, or baby tomatoes to go with the creamed cheese?

Ooh, I went to a Turkish restaurant last night and had a kind of salsa which seemed to involve tomatoes, roasted red peppers, smoked paprika, garlic, onion, chilli.... Not sure what else, but it went really well with flatbread and creamy yoghurt so similar concoction might go well with bagels and cream cheese? Maybe look at Ottolenghi?

Finely chopped sun dried tomatoes or garlic fried mushrooms will go very nicely as toppings for bagels with cream cheese.

My fave veggie Christmas day brunch is deep fried mozzarella sandwiches.

I'm veggie and think I'd be happy with just the bagel and cream cheese tbh! You can get quorn bacon mind... Does he not eat fish either as some veggies do...

Veggie bacon is rank.

You can make aubergine bacon, which is nice, but I can't see it working with cream cheese.

I'd go with avocado tbh, and salt and pepper.

I would say do something with halloumi (not sure if the cream cheese would go, but you would get away with it if you wanted) because it has a kind of smokey, cooked taste and texture which would make it seem like a genuine alternative to the meat eaters bagels rather than just sticking a piece of veg in there instead of the fancy salmon everyone else is getting.

Scrambled eggs? I'm a simple soul. Posh food is wasted on me but one of my favourite meals is bagels with marmite and scrambled or poached eggs

I agree with notenough, as a lapsed vegetarian I would have just wanted the bagel and cream cheese. It's just breakfast, I wouldn't feel left out.

I also like veggie substitutes like quorn etc but I know plenty don't so you'd have to ask.

I disagree with sweet and notenough - yes I'd be happy with just cream cheese any other day of the year but on Christmas day when meat eaters are getting something posh I would feel hard done by to have no substitute.

Another idea - sainsbury do a lovely truffled mushroom tapenade in the exotic ingredients section which I bet would be great.

My favourite bagel filling is Swiss cheese with salad and mayo.

There are several good fake bacons, quern rashers are very bacony on flavour and slices of smoked tofu fried or grilled are yum too.

I do roasted, skinned red peppers as a smoked salmon alternative on cream cheese bagels.
