Christmas ham - how do you do yours?

I have bought a gammon joint with the intention of cooking it on Christmas Eve and then having it cold on Boxing Day and onwards.

So... What do you do with yours?

Cook it in ginger beer.
Serve it with mashed potato, kale and parsley sauce.

No cooking methods are exactly what i would like. And serving suggestions!

I've ordered a Heston Bloominwhatshisname creation. We had one last year and it was lovely. I usually cook it towards New Year's Day and we eat it with salad/on sandwiches with pickle and cheese.

Watching with interest as planning to do the same!

I cook in cider and then glaze with marmalade and mustard powder, studded with cloves.

We soak ours over night then boil to cook, stud with cloves, cover in brown sugar, top with pineapple rings and glade cherries and then roast. There is always a fight for the cherries/pineapple and any caramelised bits. This is how it has always been done in our house.

I've done ham the Nigella/coke way a couple of times but the family (DH) has decided it's "too sweet" - he doesn't like savoury and sweet together - so I need just a savoury method of cooking and serving it.

I use a hairy bikers method - boil with celery and carrots etc then into the oven with a honey and mustard glaze

I a recipe from good house keeping magazine and its become traditional for us to eat on Christmas eve and for boxing day toasties. it uses maple syrup, ginger and soy sauce for glaze. I tried a different recipe one year and though it was nice no where near as good as this

Totally converted to Nigella's ham in coke a few years ago. Not the cherry coke one with cherry glaze (havent tried) but simmered in normal coke and then glazed with mustard powder/brown sugar combo and baked. Absolutely delicious.

We eat a few slices with bread and pickles on Xmas Eve and then the rest with Xmas dinner and for Boxing Day leftovers.

Its also very good with a big tray roast of garlicky red skinned potato wedges, red onions, sweet potato, carrots, any root veg etc and some braised red cabbage.

I soak mine for 24 hours before boiling but i'm sure I read that it's not really necessary.
I cut the rind of then roast with mustard & sugar.

Nigella coke ham here too, it's delicious!

I just soak and boil in water then glaze with marmalade or honey. BUT, I par boil my roasting spuds in the cooking water, they are lovely.

I dream of the Nigel Slater one in the lead up to Christmas. It is currently on the hob!

I put mine on the rack of a roasting tray, with cider and some herbs up to the bottom of the rack, cover with foil and steam for 45 minutes per kilo. Then I reduce the liquid from the tray and add brown sugar, honey and mustard. I take the rind off and roast the ham in the reduced glaze for about 20 minutes.

Nigella' s ham in coke here too. Might try the cherry coke one this year.
