Boxing day lunch inspiration please

I'm thinking of cold turkey, ham and chutneys/cranberry sauce along with jacket potatoes. But I'm stuck as to what sort of veg to do. Has anyone got any ideas for a veg dish that's easy but interesting? Feeding 15, including quite a few children.

No inspiration here. But my boxing day lunch has always been turkey, HM chips and peas. Always!

I'm doing pulled pork, crusty rolls, home made coleslaw, cheese, biscuits and chutneys and potato salad :)

You could do a potato/veg gratin? Easy to chuck in the oven and nice and tasty

Left over meats from Christmas Day, bubble and squeak (obviously!!), jacket pots, maybe throw on a naice pizza?

Nigella has a nice Christmassy coleslaw with red cabbage and mango chutney. I'm making it for Boxing Day this year.

I always make a tomato and red onion salad. It can be prepared in advance and the dressing added too. It's tasty and colourful.

We're busy Christmas Eve so doing the ham on Boxing Day. Nigella's ginger ham and serving with dauphinoise potatoes and veg.

Second cauliflower cheese. Beetroot salad in balsamic dressing is nice too. Get vac pac of chestnuts and roast for 25 mins with some diced vac pack beetroot, add chopped parsely. Very festive.
