Christmas stuffing - nut free?

One of our guests this Christmas lunch has a severe nut allergy. If anyone has any recipes for a completely nut free but delicious stuffing to go with the turkey I'd be v v grateful.

My basic stuffing is wholemeal breadcrumbs, diced fried onion, equal quantities of fresh parsley, thyme, sage, a little oil to fry the onion, salt and pepper, some hot water to bind the mixture together. For Christmas, I add fried diced bacon and crumbled vacuum packed chestnuts but you could leave those out if you like.

I know it sounds very plain, but it is delicious. You could add lemon zest or dried cranberries if you fancied.

I bake some of the stuffing in a shallow oven proof dish, and cut into portions to eat with our chicken, and some is used to stuff it.

I do a sausage stuffing. Use a pack of sausages, bread crumbs (fresh), poultry seasoning and chopped onion.

It is my favourite part of Christmas dinner

I leave out the ham (and oysters) as we're vegetarian but this is my all time favourite stuffing.

Juice and zest of 2 un-waxed lemons,
1 lb white bread crumbs
6 oz butter
4 – 6 large cloves of garlic, crushed
8 oz lean ham, finely chopped
2 heaped tablespoons finely chopped celery
20-24 juniper berries, crushed
1 level tablespoon fresh thyme
6 heaped tablespoons fresh parsley, finely chopped
Salt and freshly ground black pepper
3 eggs beaten
A quarter of a pint of milk
10 oz onion, finely chopped
Optional mushrooms or oysters finely chopped

Put the breadcrumbs in a large bowl and moisten with the milk, don’t over wet it you may not need all of the milk. Sweat the onion, garlic and celery in the butter of half an hour. Add the grated lemon zest, the lemon juice, ham and herbs (and mushrooms/oysters if using) then stir into the breadcrumbs. Bind the mixture together with the beaten eggs and season.

Stuff the turkey with it. Alternatively put into an oven proof dish and cook at 200 C for about 30 minutes, or form into balls and cook for about 20 minutes.

TBH OP, I've never come across a stuffing that has nuts, other than chestnut stuffing.

For poultry I use breadcrumbs, butter, onion and thyme, but there must be hundreds of nut free stuffings to be found on Google.

Middleaged I do a walnut and apricot stuffing.

I also do a sausage meat stuffing which has no nuts. Or there is the Nigella gingerbread stuffing which mumsnet raves about (although I can't stand it).

Sausage meat with dried fruits (cranberries, prunes etc), onions, apple, herbs, breadcrumbs and a beaten egg.

We do variations on things above:
*brown bread crumbs, lemon zest, parsley (fresh), mixed herbs, thyme, salt and pepper. Bind with melted butter, lemon juice and an egg

• fried onions and bacon, both finely chopped and allowed to cool. mix with dried sage and sausage meat. I cook this in the turkey (which is now against best practice), but I've also seen people wrap in streaky bacon. Its also yummy sliced up cold the next day.
