It's dead easy too. Onions, garlic, mushrooms fried. Slug of port. Reduce. Stilton crumbled in. Pastry.

I like Cauli cheese with steak & kidney pie, so enjoy it with gravy, but everyone is different Smile

I'm vegetarian and at xmas I'm always happy just to eat lots of roast vegetables and potatoes, plus we do stuffing in trays rather than in the beast, so I eat that for protein. Follow with cheese course and it's a nutritional meal. I'm not generally keen on meat replacements like cauldron sausages and linda mcartney and if I'm cooking it would be a thai curry or something which my parents would not accept for xmas lunch.

I've always fancied this cheese and parsnip roulade as a veggie alternative to turkey.

I know it doesn't fit your 'serves 1' criteria but I'd make it the day before, keep out one portion and freeze the rest.

Make a big one a few weeks in advance, freeze in portions.

I rarely get fancy looking slices, but it all tastes the same smothered with gravy Wink

I loathe anything offered as a veggie main for Xmas, that doesn't go with the traditional trimmings, which rules out most cheese dishes, risotto things etc.

I picked up a recipe card at Sainsburys today for mushroom & Stilton stuffed Yorkshire puds - easy to adapt for 1 person and they sound delicious

I'm usually the only vegetarian. But I am not the only one eating the veggie option. I have noticed that everyone likes to have a bit!
That might just be my greedy family, but they all get suck in.
As a result I like pies as easy to portion, and go well with all the extras. I make my own version of pieminsters heidi pie - sweet potato, spinach, goats cheese and red onion, I add pine nuts too. It seems very festive withall the veggies.

The picture here doesn't look much but they are festive filo pouches like sacks, puckered at the top, and a good size, one would be plenty with veg.
I am not a veggie, but OH and I often have these as a treat, they are very savoury and taste delicious. I would be happy to eat one for my xmas lunch.

If you want ready made, Waitrose have got loads of interesting looking veggie options in right now. There was a mushroom filo parcel that looked lovely.
OH also has their frozen vegetable wellingtons regularly on a Sunday. It is 2 individual slices so no waste and easy to sling in the oven.
