I'm going to make a Fruitcake for my parents (un-iced) so I can indulge in all the preparation and the lovely smells. Mine won't get cooked till December .

Is it just me, but when you make a big proper cake and beat the butter and sugar , it's really satisfying . Then eating the scrapings and finding some almonds and cherry pieces Wink

Wow... I'm impressed. Do you mind my asking what recipe do you use? I really wanted to make a cake this year... should I be doing this now?

Well. DP is the cook in this house. He follows delias recipe and makes tweaks. Such as mixing in ginger preserve and We had our fruit soaking in brandy ameretto and spiced rum. I will ask him if he can remember what went in.

The liquid the fruit didn't soak up is sat in a Tupperware tub and we throw in a crushed cinnamon stick to mature as we feed it from now til December!
