Loads of leftover veg - what to do?

I prepped and cooked too much veg for the xmas lunch. We have a load of brussels, roast pots, and honey and mustard roast parsnips in the fridge. Any ideas what i can do with these today? Just reheat? Bung them all in a dish and cover with cheese? Having ham for dinner so veggies on the side would be fine.Smile

Make white sauce. Dice veg roughly, throw in ham and Turkey if you have. Slap instant pastry on top. Bake.

Bubble & squeak definitely. Throw in any leftover meat and stuffing too, with a big dollop of mustard and plenty of gravy.

I could send ds round. He loves leftover veg and would make short work of most of that apart from the potatoes

we are doing a bake thingy.
layer it all into a pyrex dish, mix a couple of eggs with cream or milk and seasoning and pour over. top with cheese.
bake covered for about an hour and then a few min without to chrisp up the top.
