Sausage plait recipes

I make sausage plait every Christmas eve and I just do the standard sausage meat and onion and maybe some tomato but was wondering if anyone did anything different with theirs??

any new things to do with it would be great!! even just adding one more thing would be good

I add dried apricots and cashew nuts

Other good combinations are apple (grated, but not too much) and sage

Cheese and celery

Cranberries and red onion

I've done mushrooms and apple which is lovely
