Christmas salad?!?

I'm doing a buffet type thing this weekend for relatives.

Am serving various hams, salmon, cheeses, vol au vents (my fave), bread rolls but would like ideas for an accompanying salad.

Any notion?

Nigella's Christmas Book has a Christmas Salad in it!

My favourite is apple and beetroot.

Baby gem, thinly sliced apple, goats cheese and balsamic vinegar. Add the beetroot just as you serve, otherwise it stains the cheese and apple

crispy leaves, rocket, apple, walnut, celery , blue danish, croutons and dresssing

homemade coleslaw (thinly sliced white cabbage, onion and carrot with mayonnaise and sour cream with chives)

potato salad- steam cubes of potato and when it's tepid add mayonnaise, sour cream and chives, spring onions
