Turkey Crown vs. Turky Saddle

I mostly get a f/r bronze turkey. A couple of years back I bought a saddle (or maybe a crown, I can't remember) and it was the best I've ever done.

The following year I got a crown (or maybe a saddle, I can't remember) and it was OK but nothing special.

  • what's the difference between a saddle and a crown?
  • is one really better than the other, or was it just luck?

PigletJohn I've only ever had a whole f/r bronze turkey. Two years in a row, brined in twigs and treacle the Nigella way. Xmas Smile

Found it now.

a Saddle of Turkey is rather like a Crown, but boneless. it may be rolled, but I think the one I had was in a dome shape with stuffing. I do rememember it being very easy to carve and with no underdone/overdone bits.

A Turkey Saddle however is a canvas waistcoat worn by a lady turkey to avoid scratches from a gentleman turkey's toenails during moments of passion.
