What cakes, biscuits, other things are you baking and freezing for Christmas?

I'm trying to get ahead with some festive baking, but struggling for ideas. All advice much appreciated, especially on the following, but I'd love to hear what you have planned (not least because my list is boringly predictable!)

I'm planning to make and freeze mice pies this weekend. Do I cook then freeze, or freeze uncooked and cook them from frozen as needed

I usually make a stollen that gets eaten pretty quickly when fresh. But can I make this ahead and freeze it too? Cooked or uncooked?

Do you have any nice ideas for Christmas breads that can be made and frozen as well? I usually make a batch of cheese scones for having with soup, but the ones that I froze last year went really soggy Sad

Is it okay to freeze biscuits / cookies eg gingerbread. Again, cooked or uncooked. Just a block of dough would probably take too long to defrost, but some individual biscuits that could be taken out and eaten on the same day would be handy.
