Nigella's Clementine Cake

I have some clementines that need using up and I like the look of Nigella's Clementine Cake. The only problem is I can't bake it until Sunday and I think the clementines might be too far past their best by then.

Can I do the clementine purée today and freeze it? I'm not even sure it would keep in the fridge until Sunday.

TIA

I'm sure that will be fine :)

That's a coincidence, I've just been looking for How To Eat to find this recipe! I'm sure the puree will be fine frozen and defrosted.
Have you tried the chocolate orange cake (same method) in Feast? Amazing cake Cake

Oh fab, thank you both Grin

I found the clementine cake recipe online as I only have the Domestic Goddess book. I'll look for the chocolate orange cake too, but I'm also going to make the chocolate chestnut torte from the BBC recipes section. Is there such a thing as chocolate overload? GrinGrin
