Mushroom Wellington

Hi, For those who've made this before can you premake the filling and freeze? I want to premake the filling and put together on Christmas day. Has anyone done this? Also if anyone has any other ideas for meat eating family that is veggie I would love you forever. Thanks!

I do Mushroom Wellington every year for Christmas dinner. I make the filling and assemble the Wellington in advance and then put it in the freezer, then take out of freezer on Christmas Eve and pop in the oven on Christmas Day. It freezes very well-I use the Cranks recipe. I've never tried just freezing the filling though.

Thanks, I would premake the entire thing but dh was sent out with list and completely forgot pastry. I won't be able to get some for a few days and mushrooms will go off. grrrr!
